You are going to blow up a rod long before you break off your backing. Very very few red fish are going to take you into your backing anyway. I've never even heard of anyone breaking off a fly line. I've seen rods snap, reel feet fail, drags melt, but I've never see a fly line or backing break off. Your hook is going to fail long before 20 pound dacron.
Most all of your line failures come from abrasion or the drag of lots of line in the water. Fly line and backing are not going to fail from abrasion unless you get it wrapped up in a prop or something similar. You can't put enough pressure on an 8wt to break off anything over about 10 pounds with pulling force.
Personal backing preference is dacron except for very special circumstances. It won't dig into itself, it's cheaper, and it won't count your fingers like a band saw like gel spun will.
20 or 30 pound dacron, it doesn't really matter, just pick whichever color you like the best. You're just wasting money and effort spooling gel spun.

I'd put as much on it as you can as it helps (ever so slightly) with faster line pick up (larger diameter)

I bought a 4/5 wt reel last week, it said it held 100yd of backing, and it actually held 100 yds,and with the fly line it was perfectly full. Just my FYI since I don't have a clue what I'm doing

Need is a subjective word here. You should put whatever the manufacturer suggests and start from there.
Id would put dacron on there because I think gel spun is stupid, but it really doesn't make any difference.

Just booked a trip with Kirk's Fly Shop in Estes Park while I'm there in June. All the online reviews were solid. Anyone here have any experience with them? I'm a serious beginner.

It is possible, but challenging. The action of the rod will help. Also if you are able to get into a spot where you can cast with the wind, you can avoid the challenge.

Decided to keep some fish today. Pretty rare for me to do so but these were hatchery raised fish so I wasn't too worried about it.
Four 13 inchers and one 17 inch. All caught on my 3 wt- the 17 hammered the fly and gave me all I could handle. Caught about 8 others I think.

So I haven't gotten my rod yet due to some other things going on, but my buddy is letting me borrow his Helios 2 9wt for now. My new reel is an 8wt and I really want to use it. Can I get by for a week or 2 using a 8wt reel with a 9wt rod? He also gave me his Orvis Mirage that matches the rod but ideally I want to use my new setup.

The rod doesn't know the reel is made for 8wt line. I wouldn't try to underline an H2 though. Whatever you do, make sure you're trying to cast it with the right line. H2's aren't very forgiving so if you're not careful you will develop bad habits trying to learn with that rod.
Worst case you will have a little less backing on the smaller reel but reds aren't going to run you into your backing anyway.

What exactly do you mean by the "right line"? Line on my reel is SA Mastery Redfish 8wt.

You do not want to try and cast that line on an H2 9wt. SA redfish is pretty heavy for an 8wt but not so heavy that it will cast well on an H2. A more moderate action 9wt, maybe, but not an H2.
H2's are fast. A 9wt H2 needs 9wt fly line. You can overline it with 10wt fly line if you want to slow it down but I wouldn't underline it.

Well he also gave me his Mirage 9wt so I may just use that for now until I get my rod
Eta: I'm not expecting to light the world on fire, really just want to get out on the water with it and get used to casting and whatnot. I definitely don't want to be setup for failure. Thanks
