Fwiw, I steam shrimp now, not boil. They don't need a whole lot of help tasting good. Scoffed at the idea at first but now that's all I do.

My dad taught me to do it this way. Been doing it for years. As soon as you see the meat pull from the shell, cut the fire. Fast and easy. Never fails!

boil all the corn and potatoes until done, turn off, then add the shrimp. let them soak. never boil again.

If you want a real buttery feeling tasting shrimp, puree your lemons in a blender and dont add until you cut off the fire. Lemons are an aromatic and lose lot of flavor if boiled.

Thanks wasn't sure about how much to buy. Ok to buy day before and keep in fridge? Supposedly the seafood market in Arabi has great shrimp but it's on sat and the boil on Sunday.

Sorry, but Old Bay is some nasty shite. I know some people like it, but I'd rather no seasoning at all than that stuff.

I like it, but as far as steaming you can use whatever seasoning you want. I actual use an Emerils recipe that I modified a little bit.

Someone gets it. The water does not need to be at 212 degrees to cook shrimp. In fact, shrimp are very easy to overcook, which ruins the delicate nature of the meat. That's why steaming works well, too.

How long is the soak? I know it varies with size, but basically how long? 2, 5, 10 min?

they will float when they are cooked, they will start to sink when they have soaked enough, take them out sooner than later, nothing you can do with an overcooked shrimp and it happens quick
