Guy we would give them to said he would boil first, sear on the grill, then oven smothered in bbq sauce.
Didnt see how it could taste bad after that.
I would try a coon from the woods but not one that lives near a dumpster.

I asked him how he did it and he told me he just baked it in the oven, then shredded the meat and mixed it up with bbq sauce.
Ate it exactly like that, and it was good. I generally don't even like BBQ sauce on anything, but it worked pretty well on coon.

I've had it once and didn't particularly like it. Now I'll take nutria any day of the week but I'll pass on coon.
I will say that a few folks told me that the guy who cooked it had a habit of doing it in a way that made it a bit strong tasting and greasy, that combo is what put me off on it.

Was a teen out squirrel hunting Toledo Bend river bottoms with Dad and Grandad and came up on a mama coon with a bunch of baby coons way up an old oak. Dad couldn't believe how screwed up the choke on the short barreled 12 ga. I was using was. We were both a crack shot but that 12 couldn't knock them outta the tree, had to wait for Grandad to come outta curiosity over the shooting with his trusty .22.
We had smoked coon that night as we got mama and 3 young coons. Was really really good too. Probably helped that Grandad was orphaned age 13 (1920) and literally hobo'd around TX, AR, OK, LA through the 1920's early 30's. He had real experience fixing/eating hobo stew.

I have personally never cooked coon, but my grandmother-in-law cooked it all the time. It was GPIL’s favorite meat. He was a trapper back in the day. The key, she always told me, was parboiling the meat before you baked it. She always baked hers with yams.
Same here only grandfather (trapper), and grandmother cooked it just as you described. When hunting rabbits, squirrels or ducks, if we had a chance to shoot a coon for grandpa we’d do so.

Make damn sure you clean it right or whole thing will be wasted.
This for sure. They have musk glands that need to be removed without piercing or you can ruin a lot of meat.
I've had roasted coon several times along with baked sweet potatoes and it was very good.

It all comes down to cleaning it properly. Cutting out that nasty fat and removing all the musk glands they have goes a long way in making the meat taste good when cooked.

Many years ago an older guy told me bbq raccoon was really good. I asked him how he cooked it and he said the first thing you do is boil it for about 1 1/2 hours, then put it on smoker with bbq sauce for 3-4 hours.
He lost me right away because anything you got to boil first... well... not for me.
