Saw a dude bring in a ham and a shoulder to the processor the other day in a 5 gallon bucket....no ice, just meat in a bucket. looked like it had been in an ice chest, so that is good.

When I saw him cutting the tenderloins and backstrap I was thinking.... what the hell is wrong with this guy. But by the time he finished I think I may actually try this with my next deer

If you are going to debone you certainly should just do it all yourself. If anything just drop off the meat you want ground or into sausage. Once it is deboned, all you do is cut it into steaks and roasts and wrap it up.

I do mine now and it's really not that hard. You may as well either gut and drop it off, or do it yourself.

We just gut the big ones and they go to the processor. We do the others ourselves.
