Soak in a lye bath and strip all of the old grease and seasoning off. I buy lye at the hardware store (drain cleaner) and mix with water in a lug. A very dirty pot might take 3 days to loosen up all the crap. If it is rusty, you can soak in vinegar, rust off, or make your own electolysis tank. Sometimes I have to use stainless steel wool and some elbow grease. Sometimes I use wire brushes areound detailing on the pot.

Then re-season by wiping on very thin layers of seasoning and placing in a 400 degree oven for an hour. Do this 3 or 4 times before use.

I think the only way it is going to go rancid is if you put too much seasoning and it collects in the bottom of the pot when stored. Wipe on seasoning and then wipe off, leaving only a thin layer.

A properly seasoned cast iron pot doesn't need anything on it for storage. Just make sure it's dry, it won't rust.

So spraying it down with PAM non stick spray and wiping it down is probably not a good idea??

I use lard. I use the one in the green tub at Walmart. Lard doesn't go rancid like veggie oil. A lot of people keep rendered bacon fat to coat their pots for storage.

What i use too.

For those posting about going rancid. I've seen cast iron pots and dutch ovens that are seasoned with grape seed oil, canola or whatever go unused for years, never seen or heard of any being rancid. As long as no thick coating is left on it when being stored, it is G2G. I just found two dutch ovens that haven't been used in many years, I cleaned them in the sink, seasoned with grape seed oil and they are fine.

Whatever you season it with, wipe as much out before heating. Do not leave a thick coat on it.

So you keep the oil in the fridge to keep it from going bad before you use , then you smear it in a pot , do you keep the pot in the fridge after?
