Live bluegill. Been catching cats on jugs for 40 years and tried everything. Catfish are predatory and a live bluegill struggling sends out vibrations that attract big cats better than any smelly crap I ever tried.
Channels, blues and flats will all go after live bluegill. Hook them in front of the dorsal fin above the lateral line and they will stay alive all night struggling.

The eel comment brought back memories - as a teen we would use it. We would catch them in crawfish traps and cast nets, cut into chunks bait the hooks.
Beef melt and chicken gizzards are good options too.

Catch them with Sabiki rigs or small crappie jigs behind dikes on the MS River.
You might also check some bait shops because I’ve seen some sell them whole or cut into chunks.

Chicken gizzards marinated with a pack of strawberry Koolaid. Just the dry Koolaid mixed into a bucket of gizzards and let sit a while.

I know a guy who uses goldfish. They are pricy and he doesn't do it often except on certain good fishing days. Those big eyed goofy looking bastards and regular goldfish about 2-3" long. I didn't believe at first but they catch catfish.

Get you a pack of stew meat in the meat section. I get the kind that is already cubed up. get 1 container of chicken livers. cubed up stew meat in zip lock bag. Put chicken livers in blender add just about cup and half of water and blend up (It comes out the consistency of a smoothie) . Pour blended chicken livers in on the stew meat. Let is sit for a couple of hours. Put each piece of meat on the hook
Another thing I have done that works well is mixed in non flavor jello. I will go to wal mart and get to go cups that they put like a side of salad dressing in. I will put a piece of stew meat in each cup, pour the blended chicken livers with non flavor jello on each piece just to barely cover the meat. put the lid on, put in zip lock, put in ice chest with ice and rock sale and it holds that flavor for a long time under water.
That stew meat really really absorbs that blended up chicken liver and stays on the hook good

Load that hook up with as much chicken liver as it will hold then slide on a chicken heart to hold the liver on the hook....should look like a pretty good ball on the hook....that's what my grandma taught me back in the 80s and that shite works.

We were catching a bunch of small white trout early in the summer. I kept a few of em and cut them up one trip to use for jug line bait and it worked out really really well.

There's a meateater episode on catfishing and he goes with an old man from Kentucky. Old man uses cheap chicken marinated overnight I believe with like garlic and maybe something else? Just to add some scent. Old man basically said this isn't the best bait but its the easiest, and that he would rather put out more lines and fish longer than screw around spending time and money on bait.

I just find whatever old or freezer burnt meat i have at the bottom of the freezer. works every time with an over 50% hook up rate in the canals off the intracoastal.
