I ended up getting a vacuum sealer which was a game changer but sadly, if I don't honestly force myself into eating game as it comes from the field than it will just stay in the freezer.

Honestly, I am a big duck hunter and cooking it is almost as big an event as the duck hunting itself so we tend to eat them as fast as they get shot. After duck season, I am so sick of duck outside of a gumbo, the only game I will eat is deer. I am the same way with fish too.

A lot of people in the FL panhandle eat mullet. I get it, you can have enough for a fish fry for 50 people with a few tosses of the net, but it’s not a great flavored fish. The ones that spend most of their time on the sandy bottom in high salinity are decent, but the ones that live over muddy bottom in brackish water are pretty nasty

The deer I kill each year provides enough ground meat. If I want a roast, it comes from wild hogs. If I want some red meat to grill / smoke, im buying beef

Mullet is fine for most people east of Louisiana. You just have to eat it right away. Cant even wait 24 hrs. Those people also consider black drum to be trash fish - just varies by region I guess.

I had shot 3 of them on the way back from a failed duck hunt one day and fixed a big pot of gumbo with them. I picked the meat off the bones after it had cooked down for a few hours and then cut it into smaller pieces.

I fed this to about 15 people and they really tore into it. Unlike you, I went downstairs and got one of the pelts from the cleaned nutria and told them this is what made up the brunt of the meat in the gumbo. About 5 of them were just about freaking out at first then admitted they found it very good. Only one was really pissed about being tricked into eating nutria, but he got over it.

I find eating nutria is more about mind over matter than it not tasting good.

As to deer meat, do y’all not make sauce piquant, spaghetti, or rice and gravy with cubed meat?
It seems many of y’all make ground meat. No one makes gravy steaks? My wife loves deer gravy steaks.

Nutria is strangely decent once you get over eating a giant rat like animal. As for deer/cervids in general I think too many people need to get away from the fry or ground mentality. Try aging your meat hanging (with skin/fur still on) for at least a few days and then steak out thick cuts of the hind quarters. I like to cut 2-3 inch thick pieces and cook medium rare with just salt, pepper, and maybe butter for a sear. Same goes for ducks, don't overcook and treat like a steak.
For me I don't have any love for bear (greasy and off taste), catfish (since I prefer grilled/baked/pan seared fish), or squirrel (too damn small and too many bones).

My uncle was recently given a couple pounds of ground deer meat and it made some of the worst burgers I've ever had. It could've been the meat or the prep but it was god awful, dry and didn't hold together.

normally i made most of my ground out of trimmings. everything else I freeze in big pieces. I've had venison gravy steaks before but never get them made. I slice roasts and cook like round steaks

I normally stay away from making burgers with venison. I'll mix the ground with egg and bread crumbs, make meatballs, and then brown them with onions and make a gravy to serve over rice

If he used 100% deer meat, his burger would likely be dry as dust and not hold together

If his uncle jewed him and didnt pay to mix it with some fat source it wasnt on the cook

May i suggest the twice cooked duck at Zea. If you dont like that then you should just switch over to a liquid diet. If you breast some dabbler ducks and marinate them for 30 minutes or an hour in Allegro Wild Game marinade, then cook them medium rare/medium in a pan you will not be disappointed baw.
