Here's another question for you OP, do you drop the temp at night? Many people for example change their temp from 74 during the day when they are away to 68 when they sleep.
Even if its just a 2 degree drop, that could be enough that the constant running is freezing your system up.

No temp drop at night. I have the schedule set to 80 when we are away and 74 when we are home.
I think I'm going to call the company that installed when the house was built. He went as far as to question the temp reading of the thermostat. It's 78, it's noticeable
I used this guy because he is a family friend and he sent one of his workers.

This is very unlikely but you may have a loose wire that is making contact during the heat. Copper has a high coefficient of thermal expansion so it grows in the heat. If the loose connection is in the sun or in the attic you may have temp swings of 50 degrees or more. Again I doubt this is it but I can’t think of anything else. Is the outside unit running at night or just the fan? The hot air is due to the fan blowing without the compressor running. The attic air and consequently the duct work is considerably hotter than your interior.

Both run all night. It's like it gets to a point where it stops cooling. Runs all night then starts cooling again.
It stops cooling off before all the doors are closed and starts cooling before they are opened. Weird shite. It is on ecobee thermostats if that matters? Here's the current snapshot.
It has been running for over 2 hours now and can't get past 75.

I’m not sure of the technical term, but are there automatic diverters in the air ducts?

Do you happen to have the thermostat set so that the fan runs continuously. If so it is possible that the compressor and outside unit are actually off at night while the inside fan is running. If the outside unit is running including the compressor this is not the problem but I would definitely go outside when this happens and make sure everything is on as you could have it programmed for fan to run only at night or some other such scenario. Also being its upstairs it could be that the attic space, etc cools down in the night allowing the unit to catch up in the early part of the day. As the attic heats up during the day it will be hottest in late afternoon/evening transferring such heat to the living area if insulation is insufficient. It is normal for the upstairs of a 2 story to be a couple degrees hotter just because the heat rises.

Starting and stopping sounds like its possible the evap coil is freezing and then thawing out. First clean the evap coil.

Well isn't that a fancy little chart you've got there.
Perhaps AM and PM is reversed?
ETA - I would be shocked if the AC guy didn't check the Evap coils to see if they were dirty, as such a thing would make a lot of sense.
If he didnt, i would get a second opinion for sure.

I have the fan set to run 5 minutes every hour even if it doesnt attempt to cool. It is 100% trying to cool but it's just not doing it.

An A/C unit cooling ok in the daytime would cool even better at night. 1) Closing doors and blocking off return air would explain it (you said you tried that?). 2) Something is screwy with your thermostat and it is raising a temperature set point at night.
From your graphs, it appears the temperature is controlling at 78 deg at night. The temperature otherwise would continue to rise I think. Looks to me like your thermostat is controlling the temp set point at 78 deg.
Also: Do you have electric heater coils in your air handler, i.e. is your heating electric? If so, your thermostat could be turning on some heat at night.
Based on the repeatable temp / time profiles, it looks to me like a screwed up thermostat.

Agreed. It was an attic coil leak.
I was using an incorrect term because I don’t know HVAC well enough. And because of that my new Rheem 3 ton installed last week hasn’t run since I got home two hours ago. My little 1.5 ton is working it’s arse off until tomorrow at 0800 when my HVAC guy gets here.

on the 3 ton unit thermostat go turn the fan button to "on" and the fan will run 24/7 and it will help circulate the air from the small unit at least and spread it throughout the house. if the heater part is hooked up and power is on for it that is.

Tried that. Fan won’t even turn on. No breakers have been tripped.coils aren’t frozen. Drip pan is empty. That’s all I know about troubleshooting.

If your blower wont even turn on it is 99.8% an electrical issue. Has nothing to do with your 3-ton new Trane IMO. Check main panel, check sub-panel often by condenser, check shut-off next to air handler. If all those are good, you fricked.

That was going to be my next suggestion. Turn off the break to the AC for a couple of minutes and try to reset your thermoset. Do they have a hard reset? Not sure, If so do that OP.
Then, potentially go and get a new thermostat. It's an easy swap, you can just get a cheap $15 on to see if that changes anything.
I'm guessing that graph is just the blower? Maybe it just turn to a fan in the winter?

What you are showing is quite a puzzle...and I don't see an easy answer to it all. I am almost sure that there is an issue (either malfunction or programming) with the control of the system. Meantime, you need to check day and night to see if the airflow across the coils changes. Also need to check day and night to be sure the large line on your outside unit is cold/sweaty and the small line is hot to the touch.
Another thing that I notice is that your system recognizes whether the particular rooms are occupied or not. You need to be sure that when the kids are going to sleep, the unit does not mistake the rooms for being unoccupied and shut down the cooling...some hotels are intentionally doing that nowadays.

How long ago did you change to the ecobee? Was the issue there before? May be a setting that you're overlooking.
