The cool thing about magic is that it's so make believe you could literally write anything you wanted to make guns powerless against the wizarding world.

Not going to go full nerd, but any half-assed wizard would disarm a muggle with a gun before the gun was drawn.

Nope, but I can think faster than you can finish drawing and then pull the trigger.

Possibly, but I don’t think that a wizard would disarm a muggle if the muggle shot the bullet intended to kill the wizard. A bullet flies faster than the mind can think.

Seems to me like it’d be incredibly difficult to stop a bullet even if you had magical powers.

In the Prisoner of Azkaban, they actually write that Sirius Black has escaped from prison and share, in the Wizard Newspaper, that they have told the non-magic users that he has a gun. In the wizard paper, they explain that a gun is a 'metal wand that muggles use to kill people'
They keep pretty separate from the regular humans and do their best to keep away from them. Two societies evolved separately. some wizards are fascinated with regular people culture. Some find it abhorrent. So it's not so farfetched to have this group who already has a very effective way of murdering people not develop an additional method of it. There are no standoffs between humans and wizards mentioned in the book. At least no particularly violent ones.

In the stories, it's made clear that the "incantations" aren't necessary

As Harry is yelling incantations at a traitorous Snape (who just murdered Dumbledore), Snape foreshadows his double-cross by telling Harry to keep his mind open and his mouth shut. It was a huge part of book 6 but I don't think it was mentioned before then.

....and then she forgets/abandons the plot device for the 7th book entirely.

More advanced wizards can fire off spells as quickly as they can think. If the wizard saw you draw, you would be dead where you stood before you could pull the trigger.

Even voldemort had to speak avada kedavra baw

In my opinion, metaphorically speaking, all of them carry guns.....their Magic Wands.

What’s stupid is that Voldemort felt the need to use an advanced death curse to kill an infant.

No, he didn’t. He usually did for the purposes of mentally torturing his victim, but he didn’t have to. YouTube link to final battle:

I always wondered why no wizard ever figured out electricity? That entire castle was lit with torches like the damn dark ages.

And what 14-year-old wizard isn't gonna spend all of his free time creating the perfect girlfriend, if you know what I mean.

Years ago, I read an interesting theory for why China, after centuries of dominance in the sciences, was overtaken by Western Europe: glass.

China had perfected porcelain, so they had little use for glass. Europe developed glass instead, and they later stumbled onto curved lenses, and the rest is history.

In a world in which you can power objects with your mind, electricity becomes far less important.
