It's a regional thing.
"Hotdog" doesn't mean the same thing to Chicago people as it does in Louisiana or elsewhere. Getting a hotdog in Chicago is like getting a poboy here. Putting ketchup on a hotdog would be like a northerner talking about how they prefer to put dijon mustard on their Louisiana fried shrimp sandwiches.
ETA: And in Chicago or equivalent hotdog culture, ketchup is thought to be child-like because only the kids eat plain hotdogs with ketchup since they don't usually like sweet relish and peppers and tomato etc. on a hotdog. Again, it would be like kids in Louisiana that won't eat a poboy fully dressed because they don't like lettuce or mayonaise and just eat bread and shrimp with ketchup. Adults just shrug like "you know how kids are"

Ketchup is probably a higher quality condiment than that mystery meat chili that goes on concession hot dogs.

I've never understood why anyone woukd care about others opinions on what they like to eat.
I like a hamburger that's completely plain and i fricking hate cheese on one. I order a burger plain and almost invariably someone will say "how can you eat it plain?"

He's from Chicago and it's a widely accepted thing there...almost like a trivia question when you go on tours. He's just trying to be cool and stay true to his roots.
