My experience as well - in the area just past Lafayette to Lake Charles. I've had it like that nowhere else.

I agree, I'd rather the more traditional but for me still edible. Burns the lips a bit with the seasoning on the outside - I don't care for that.

He ran them through a grader and washed them thoroughly prior to cooking them. I thought this was about how to season and/or cook them?
Ive had all the BR crawfish I could handle. Lived there for 11 years. "Oh the first batch isnt seasoned right, yet. Kinda bland."
"Oh the last batch is always way more spicy!"
"You need to salt them to make them puke up their guts and get cleaned out."
Its a bunch of bologna.
When my BR friends came eat crawfish at my parents' house, they learned.
My dad's were easier, faster, more consistant from batch to batch, and better.
