Why do Italian people says "aye" and "oh" so much?

Been re watching the Sopranos and its every 10 mins or so there is an "aye" or an "oh"

While stereotyping, why not throw in "talk with their hands", "beat their wives" and "yell at their children" too?

I was on a tour in London with some Italians once and I swear to god the tour guide said something and one of the old Italian guys said "oooh momma mia!" I couldn't stop laughing about it. It was just too perfect. It's not just a SNL caricature.
