Why can't someone major in football? The coursework could include education n in anatomy and physiology as well as biochemistry. Other courses could include philosophy and studies on leadership as well as classes on finance and accounting.

Football is technically an extracurricular activity.
Playing a violin can be an extracurricular activity, or you can major in Violin performance.

The closest thing to an "athletic curriculum" is sports administration/coaching, which is really an education degree.

I guess 100 years ago football would be extracurricular. Now it isnt.

I'll consider it a curriculum when any student takes it as a course and tuition is charged for it.
I'm aware of the term but in academia it's use is different and since we are using universities as your example then it stays with academics
