I did just over 15 weeks of work for the government this year. Almost 4 months of wages tossed onto the burn pile of Fedgov.

You can't have it both ways

Not showing a profit, or showing a minimal profit is foolish, IMO.

Yes, pay quarterly, and do withholdings on your salary. You can do a % of last year's profit as a safe harbor to avoid penalties.
