Bring water to a boil ( do this first)
Add ingredients in this order:
Oranges and Lemons with holes poked trough
Whole garlic
Whole onions
Cayenne pepper
Black pepper
Salt,Sugar,Celery seed mix (you can’t buy this)

Drop in crawfish
boil for 7 soak for 25

Call Capt Sids in Metairie (Buchtown). They will send you a bag of their seasoning blend. If you are doing more that one bag of crawfish tell them and they have a “kicker” to ensure that water is seasoned appropriately. I think you can get 2 or 3 boils without starting fresh. They also ship and can give you details. They have that spicy/sweet flavor, which I think comes from the meat/fat but isn’t actually masked by extreme spice

I had a friend from the West Bank and he said it’s not a crawfish boil without mushrooms and some pineapples in it. I never had mushrooms in it but doesn’t sound bad to go with corn and potatoes but I don’t know about the pineapples.

They do a ton of catering gigs, of which I’ve been to 20-30. Their seasoning is really good and the crawfish are excellent if you get them from the bottom of the bins the serve them out of. The crawfish at the bottom have been soaking in the residual water that has accumulated along with all the seasoning they dusted the crawfish with. The crawfish served off the tops of the bins are meh at best.

Is the Youngsville C’est Bon the same as the C’est Bon catering outfit? I assumed it was because of the name and the owners have their own crawfish ponds.

I’m going to have corn, potatoes, mushrooms and sausage in all of my crawfish boils. Pineapple sounds terrible but I’ve never had it

First...no dusting. That's unnecessary if you season the water properly.

Second, never heard of pineapple but mushrooms are good. They are basically sponges like potatoes.

Third...years ago I had a guy tell me this trick he did with corn. Instead of using corn on the cob, get cans of corn and poke holes in the can and let soak once you turn the fire off. Instead of getting corn on the cob, you get flavored corn kernels you can eat with a fork.

Same. I love me some hot dogs the next day from the boil too.

I'm gonna have to try pineapple for my daughter. She loves pineapple.

I spent a few years working at Tucker's Seafood in Baker La. I learned how to properly boil Crawfish, Crabs, and Shrimp while working there.
I use liquid crab boil, dump and boil powder, and add more salt and red pepper. For home boiling, I add a couple of lemons and two large onions peeled. I bring the pot to a boil, add crawfish, bring back to a boil and let boil for 7-8 minutes. When the timer goes off, I shut off the fire and either spray water on the outside of the pot or add about 10lbs of ice to the water. This stops the crawfish from cooking and I let soak until it has a good flavor. I don't like them so hot that I can't eat them, but I do like a good bit of spice. I have never, and will never, dust them.

Along with the crawfish, I usually cook corn, potatoes, mushrooms, and sausage. I have added hot dogs for kids a time or two as well.

Unload it with vegetables and the cut them up and make omelette the next day.

Makes a bad arse omelette. Mushrooms, onions, little red potato mashed up.

ETA: and most of the crawfish restaurants in Lafayette are owned by crawfish farmers
