Rub your fingers through it. If it is grainy, that's ok. Smell it, if it has a weird smell not good.

That happened to my son, when he was 2-3. My wife freaked out, big time. For him, it was a parasite he picked up from a trip to tennessee (he played in a stream, probably ingested some water). The doc prescribed some meds and it went away. Oh the other hand, it can indicate serious issues. So, bring a sample to the doc, and they'll test it.

Definitely call the doctor. As others have said, they may tell you to wait to bring him in until you can bring a stool sample, but they may be able to give you instructions on how to collect it so it doesn't get contaminated.
Is he potty-trained? I only had to collect a stool sample for my daughter when she was still in diapers, so I imagine that was much easier than if she had been older.

My poop turns green when I eat Little Debbie Swiss cake rolls. I can eat other cakes and brownies with no issues, but Little Debbie turns it green every time.

For asking if other people have experience something? I'm not asking for a diagnosis and yes I know 80% of the comments are going to be retarded but had you read through the thread 3-4 other people have posted about a similar incident.
I know what will happen if I call the Dr. now which is why I'm not even going to bother unless it happens again.

Nah she is potty trained, doesn't need Desitin anymore. She's been drinking a lot more milk than water the last couple of days so I'm hoping somehow maybe that caused it. Been trying to get a lot of water in her. Hopefully the next one will be normal.

But, if the OP has no idea what could have turned his kid's poo white then he definitely needs to call a doctor.

My kids, grandkids, nephews. I've seen lots of kid poop. Never saw white poop.
Albino poop sounds pretty rare. Maybe you could sell jars of it on craigslist.
