I-5 Northbound from Seattle to the Canadian border doesn't even make the Top 500 US Highways.
It's a pretty boring drive outside of the stretch through the Chuckanut mountains.
I'm actually doing that exact drive today in a few hours.

I THINK it's leading up to an interchange with I-22 (Bham to Memphis). If it's done within the next few years, I'll be stunned. All of the lane shifts/closings THAT HAVE BEEN THAT WAY FOR A WHILE are somehow new to every day commuters - guess what, dipshit, today is not the day you get to drive in the left lane indefinitely.

Least favorite: that road between Wichita Falls and Amarillo. Can't remember the number.

Also of great note: Highway 89 in northern Montana, leaving in St. Mary and taking Going To The Sun Road through Glacier.

Quite a few boring ones.
As far as pretty ones California has plenty (although not US Highway designation. )
The PCH of course, but also highway 49 (get it?) that goes along the motherlode area of the western Sierra is magnificent.
As far as the eastern US, one that hasn't been mentioned is I 40 from Knoxville to Asheville.
One more is the US 1 going through the Florida Keys.

It is gorgeous.
They've been trying to push our road north to have road acces to Juneau from outside. If it's built, it will be spectacular.

I-40 is a nice stretch

Not in the US, but that stretch of BC 99 from Vancouver going north to Whistler is pretty awesome.
Most of the major highways near the Mighty Five in Utah are spectacular. Haunting.
On the other hand, if I never take US 31 from Indianapolis to South Bend again, I will be perfectly content. Lots of highways in Illinois suck arse, too.
