Cargill is easily the largest privately owned. Finding the largest owned by one person is a bit more difficult it seems.
Pretty sure John Menard is the sole owner of Menard's and last I knew ABC Supply, which is actually bigger than Menard's, was owned by the founders widow.

I worked for Cargill back in the late 80's- early 90's. It was a FAMILY owned company back then. But some of the "family" wanted some of their money, so the company started an employee saving plan/stock owner ship plan. This allowed the family members to be paid part of what they owned in the company.
I worked for them for 10 years, putting in max matching into the savings plan. The plan value grew really well and I ended up with over 30% return plus a good retirement payment each month.
I don't remember the net worth of Cargill back then but I think they were in the top 5 largest US companies.
