What should a master carpenter be charging to put up a 15x30 cypress pergola

Labor only.
Husband-wife team. Guy supposedly does some incredible work. Quoted my parents the following:
- $8000 for demo of current pergola, culling and sorting of old lumber (to make a display wall at my mom's company), and installation of new pergola
- $5000 for installation/materials of cypress tongue and groove roof
it's gonna end up running about $20k total with material. I just think that the labor cost is kinda high for a job that should take 4-5 days for 2 people. i realize he's working with a woman, but still. He estimated 9-14 working days, which I just can't wrap my mind around. It shouldn't even take a day to demo the original. My mom is out of town for the next 3 weeks and my dad is at the office all day, so they won't know if these "working days" are 2 hours or 12 hours lmao. I think my uncles and I built the first one in 5 days, though we were joe schmoes (not pros) and didn't put a roof on it.
I emailed him and asked for a detailed estimate summary so that we can better know what's going into those numbers and he sent this
Is this in line with current carpentry rates? The guy is very respected, but like I said, it just seems a tad high to me.
What would be a reasonable charge if the above is not reasonable?

Upon delivery of new lumber, construction will begin following the original design minus the 2”x2” slats plus an added roof as per our discussion. The roof pitch will be 2” on 16’ from the house back towards the yard. This is the minimum necessary for the proper drainage and will be hardly noticeable if at all. The six posts will be anchored to the ground or cemented in ground based on what we see when we remove the old posts, and what is best for this particular application. The bases will be treated to deter rotting. We will install two sets of projection beams spliced and anchored to the top of the posts as per current design. Anchoring is to include nails, brackets and contractor’s adhesives as needed. The 2”x10” joists will be placed perpendicular to the projection beams at 16” on center. The Cypress v-groove planks will be installed perpendicular to the joists. A layer of ¾” plywood decking (CDX) will go over the cypress planks. A salvage strip will be secured to all sides of decking followed by 15# felt and appropriate roofing materials. The roof will be coated using 100% silicone. Decorative trim pieces will be installed on bases of posts. All electrical work is to be performed by a licensed electrician and is the sole responsibility of home owner.

I think 8 grand for demo is crazy. I suspect the whole project maybe 10k-12k maybe but it's a stretch 15k.

i feel like some buddies and I could have that thing demoed and dumped by lunch time, but im not gonna have the time for the next several weeks. im also not culling that shite

Sounds like you need to get multiple quotes...it is really supply and demand, the most respected builders may be in high demand, so they can charge more.

You can get demo for around $2,000.00. Check out Home Depot. I'm very happy with my 26'x26' which includes stain. Cost around $13,000.00

correct. perg materials (without roof) should be around 6-7k

I just had roughly the same size cypress pergola installed. 16x31, tongue and groove roof w/ sheet metal panels on top.
Materials were under $6000, including the stain & metal. Had 6 8x8 beams.
Labor was $3000 to remove a 10x10 brick patio, and install the entire thing.

I did mine myself. Took a few weekends. Prolly spent $1000.

If dude has as good as reputation as you said it is he may just be bidding giraffe pussy to lower his work load. Hoping he doesn't get the job but if he does it will be too lucrative to pass up.
