since I started my dieting i can't have any of it anymore, but man it was damn good. you can use bacon bits in a pinch - but those are gross - so I never did

Blu cheese is one I always get. I’m boring so also a creamy Brie or a salty parmigiana or however the hell you spell it.

Depends on if it's going on something or not. Burgers, Gouda. Eggs, Cheddar. Salads, Bleu Cheese. Sandwiches, Swiss. If I'm gonna have cheese as a small snack, extra sharp cheddar is fine.
