In college my roommates and I watched his show religiously and I assumed everyone from Louisiana spoke like that- I also saw the movie 'Southern Comfort' as a kid, which didn't help the perception (I also recall Bert Jones had quite a drawl). I didn't know until now he was a fake Cajun. In addition to "I gha-rawn-tee!" I also fondly recall "what ya gotta did" (instead of "do") when talking about preparing a meal.

You know the old saying about better to keep quiet and let people think you are a dumbass, than speak and remove all doubt? He did more to promote the image of Louisiana being a bunch of hillbilly, uneducated morons than anyone else save the alligator hunter and his crew.

My family on my dad’s side is all from Port Vincent. Everyone’s Irish and French. But not the Cajun kind. My grandmother was the best cook I’ve ever met. People not from here have this weird belief that Louisiana food is Cajun food. It’s not. It’s creole, Italian, French. My wife is a yankee. I introduced her to chicken spaghetti, milk pies, boiled peanuts, stuffed merliton. None of that is Cajun that I know of.

"Cajuns" are a sensitive bunch these days. Actually, it is their grandchildren who are desperate to be cajun.

He was a safety man at a plant somewhere in Louisiana. He would tell funny stories to break the ice and capture his audience's attention. That later turned into a comedy bit, then his PBS cooking shows. I still find them entertaining. I always wait to see if he can make anything without Sauterne wine or Lea and Parrain. I met him on a layover in Memphis once. He was very nice. We were both traveling back to Baton Rouge.

My favorite story was the one about the LSU fan with two tickets to the Notre Dame game.

Have known him all my life his wife and step children. He lived on Pete's hwy in Denham Springs until his latter years. He was a safety engineer with LDPS. Maybe not a Cajun, but he loved the culture and was a good man. He loved entertaining and cooking for people. like most South LA people

My favorite story was about the boy walking down the road with a chicken hawk he had shot, after being asked what chicken hawk tasted like he responded "bout like a owl"

There is a building named after his father at LSU. H.D. Wilson Hall which sits at the southwest corner of Highland Road and South Stadium.

I believe he grew up in/near Roseland which is just north of Amite.

Saw him at a mechanic shop in Roseland once back around 1990 or so and asked the mechanic about him being there. The mechanic said "it's like that ole saying that people come home to die" and referred to him being from there.

ETA: I always remember Justin telling me "no matter what you do, make sure you have fun doing it."

Mom and 1 of my brothers went to 1 of his cooking shows in 1990.
