As said I wouldn't worry about a 'licensed contractor' for the demo, there's no codes to follow to demolish something. It's putting it back where you probably need someone licensed and trustworthy. Anybody licensed is going to be over their head in work right now and you can't really afford to wait for them to quote.
In a normal situation $6-7 is criminal but in this type of situation you charge what you can because some people would rather pay someone nationally reputable in one phone call instead of putting in the work to find someone cheaper.

If the dryeall and insulation are wet and the contractor has to bag it up, they should absolutely be charging by the SF.

Between 3 grown males and 4 females we did all that in a day. Took out all furniture and crap, pulled all flooring, gutted walls, and started dehumidifying.

That's criminal. Pretty sure the estimating software uses $3 sq. ft. So they are charging a 100% premium.
Heard some guys at lunch yesterday laughing about getting $15 a SF from folks. The vultures are starting to show up.

Where are you located? I'm a broke college student in the cm program at LSU. I already have gutted 3 family homes so i half arse know what to do. I'd be glad to knock it out for less than your left nut and first born child.
Eta: I'd feel like absolute shite charging more than $3-4/ sq. ft.

$3-6 based on whether or not the house is empty.

You're probably looking at $.50/SF for wall area and ceiling area. Then tack on some dumpsters fees and 20% profit.

Just pick up a couple Mexicans at Home Depot and they'll do your entire house for $100

Do you have to be licensed to perform demo work?

I'm a commerical contractor and dont mess with the houses but will offer this after seeing a few quotes from (according to the TD) reputable local home builders sending quotes in the 7-9/SF demo of only 4'. I am simply floored and offended.
1. If you have the resources to do the demo do it yourself. Get some Labor from Home depot and go to town. You need of a crew of at least 6 to make the work flow and productive. If Not there will be down time swapping from demo to clean up.
2. If you have flood insurance or just dont want the headache or work, hire a contractor. a 3000SF house, gutted floor to ceiling, removal of damage furniture, including all floors, cabinets, doors, trim, plumbing fixtures, etc Should cost no more than $4-5/SF. A 3000 SF will take a crew of 10 about 2-2.5 days to demo(correctly) and clean everything. In the demo make sure they include the removal of all of the screws from the wood after the Sheetrock is removed.
3. If your contractor is quoting per SF make sure you understand if it is SF of Sheetrock or SF of house. I have seen quotes at $2/SF of Sheetrock. That could add up very fast! Get a lump sum quote.
Some things that need to be considered is the plumbing pipes and fittings need to be properly protected and capped and electrical wiring needs not be damage or nicked.

The contractors aren't going to do the gutting. They are going to get the contract and sub it out to unskilled laborers.

I gutted my entire house. It took 2 weeks. This allowed the wood to dry.

I'm a commercial contract and here is my advice to everyone
if you have flood insurance, hire servpro or servicemaster or janiking or any of the others. That's what they do for a living
if you don't, and you can't afford the pros, then do it yourself
DO NOT pay good money for manual labor from a contractor like me. You will do just as well doing it yourself. I'm not doing houses because I don't want the liability. We are only doing commercial buildings with flood insurance
