I was recently attended a baseball tournament in Hoover and we went to Walk-Ons after a day of games and the food was actually very good. I was very surprised because I figured it was going to be another Hooters type bar food garbage

I think the burgers are pretty decent.

I never got all of the hatred for this place among Louisiana folks. Sure, it is not fine dining…..but it is one hell of a lot better than any other bar and grill - type place.
I guess it is just another case of Louisiana folks disparaging their own state….

When you get to a certain number of locations especially ones far from the original region it’s almost impossible to maintain top quality. Especially something like walk ons that is Louisiana cuisine which to be really good requires locally fresh sourced seafood.
You cannot micromanage all your franchisees in order to maintain consistency so typically these chains start to use bulk products that are processed and frozen with some items even precooked or prepared and shipped to locations. It lowers quality but ensures adequate enough quality with consistency with less chance of spoilage, and instead of one great location here and a terrible one in next city over that hurts overall reputation all your locations remain consistent

Of course. And chicken. There’s a reason most franchise brands serve burgers or chicken, it’s easy to process and freeze and still be decent quality.
Seafood and fish is a different story. It needs to be fresh to be really good. I can tell a night and day difference between fresh catfish from the processing plant and the IQF frozen fillets

They have a few around Houston but all of them are at least 30 miles from the center of Houston. It seems they only open restaurants way outside of the city. If there is one opening in New Caney then case in point. I like the food there wish they’d open open one closer into town.

Pretty much when dirt starts getting moved from IAH to Liberty, Crosby, Dayton, Cleveland and between 99, 45, 59 and 105 I’m all over it

There was a time when I really felt their food was weak, but I've narrowed down numerous items these days that are decent. Not life changing or anything, but fine for sitting at a bar and disassociating into ChiveTV.

I like the Black Jack Chicken. I have to take one of the breasts off, but it's perfect for a salad the next day.
