So the engines were just paper-clipped to the chassis with nothing else attached to any other part of the car?

Highly modified car...meh. A well trained pit crew in F1 can change four tires in less than 10 seconds, but there's no way your doing that on a stock model car.

What decade or you from? F1 pit stops (4 tires changed) are routinely under 3 seconds now with the fastest under 2 seconds. In the refueling era stops were indeed longer.
