I had kibbeh nayeh at Shaya a few weeks ago. It was my favorite dish of the night.

I’m no expert, but I thought tartare was like you take a whole piece of steak which has less surface area for bacteria to penetrate and it is chopped finely right before serving, whereas ground beef is just mushed up parts of beef with fat mixed in and is more susceptible to bacteria between all the crevices and stuff as it sits mushed longer and has many folds.

But I could be 100% wrong about this.

I am a fan of tartare and kibbeh; this sandwich sounded more like buying ground beef at the supermarket and sprinkling salt and pepper and praying for the best

Maybe it was just the pic they used on Facebook that led me to believe that that was exactly what people were doing

Yeah, that's what I'm thinking as well.

There's a reason why they put a picture like that to warn people.

They want to portray this as a bunch of rednecks squeezing hamburger meat onto a slice of wonder bread

I assume these cheeseheads grind their own cuts for it. If that's the case, and they clean the grinder, then there's not much health risk. I'd definitely try it.
