Occasionally you'll get a chef who has relocated but more often than not the local ingredients are different. A restaurant in Wyoming is not going to have fresh seafood like you would get in a big coastal city.

Went to a place in DC that supposedly served authentic Cajun food. Granted, they did beignets just fine but that's hard to frick up.
Instead of handing out ticket numbers to customers while they wait, they hand laminated cards with the name of a parish on it. Sounds cool until the first time you hear a hispanic lady try to pronounce it. "Cameron" becomes "cam-ehrr-*on*", "Acadia" becomes "Ah-cah-*di*-a". And don't even try "Avoyelles", "Catahoula", or "Tangipahoa".

There is a Cajun restaurant on the south side of the main drag in Breckenridge, CO, downstairs by the river(creek). The owner is from New Iberia I think. Food is very good, never disappointed. I go there every time we go to Breck.

Been to the one, in Billings, several times and the food is good. Maybe it was because I missed home so much that it was good but I know it was pricey as shite! $15 for a red beans and rice lunch plate. There's also Rio Sabinas and The Chop House, in Billings, that is owned by someone from Baton Rouge.

Had a seafood gumbo in Gulf Shores when I was a kid. I didn't know any better. Have never ordered out of state gumbo since. Saw it on the menu in Houston and then thought all the way back to when I was a kid and that shitty soup in Gulf Shores. It has literally stuck with me my entire life and influences my decisions to this day.

Was in a steak restaurant in Cody, WY about 3 weeks ago. LSU gear all over the place. Also had jambalaya on the menu. Ordered the steak medium rare like you are supposed to bc I am not a savage. Came out black and dry. They comped it but still disappointing.
Strange seeing LSU stuff everywhere in a random overpriced restaurant in Cody frickin Wyoming though. I would move there in a heartbeat though.

I ate at a cajun place in Banner Elk NC and it was actually pretty good. Better than a few of the places I ate in New Orleans tbh. My waitress was from somewhere off in the Appalachians.

I typically follow this, and ended up at a Louisiana-themed restaurant. Initially ordered a burger or something generic. Head chef & owner walked out into the dining area and saw my LSU polo...he was from Thibodaux and had everything shipped in from distributors in Louisiana.

No it was called Bayou Smokehouse and Grill. They would never let my white trash friends in an establishment such as Louisiana Purchase.
ETA: Never thought about it but it's very odd they have two cajun restaurants in a place like Banner Elk.

Found a Cajun spot in glen wood springs, CO a few weeks ago. Had no expectations and it was actually pretty good except for the crappy beignets.
The owners are from barataria and bailed to the mountains after the hurricanes.
