I live on a rural golf course. I love going out very early in the morning and playing by myself with no one in front of me. I can play a full round in 2.5 hours if I am the first one out.
One day I got a late start, but no one else was playing due to it being cold. On hole #16 I caught up to an old man who was walking with his bag on a pull cart. He was sitting on a bench near the tee box resting. We struck up a conversation about playing golf and life in general. It was a great talk. I did not get his name and I've never seen him again.
I've actually made friends with random strangers the same way. Both of us show up on hole #1 and decide to play together. By the end of the round, it is like we've known each other forever.

I don’t think it really counts but have had a lot of hours long conversations with people at a poker table I’ve never met.
My favorite was with a fellow South African guy about how the country has gone to complete shite.
Another one that stands out was a dude who started asking me sports trivia questions.

I feel like most of these are going to be airport/plane stories.
ATL to MSY, I spent an hour and a half talking to a lady about her kids, what I did for work, how she met her husband, my wife…literally everything. She just seemed to know how to keep a conversation going in a non-obnoxious way and seemed to enjoy talking to people.
Her husband, who was sitting next to her, put headphones on about 3 minutes after we took off. I got the feeling that he saw this as a break or something because he ducked every attempt that she made to bring him into the conversation.

Dick Cheney sat down beside me at Old Ebbit Grill while he was waiting for his party. After pleasantries, we ended up in a ~10-minute conversation about air-cooled Volkswagens. Even right after he left I couldn't figure out how that became the topic. I will talk about cars all day but the likelihood of it being about old VWs is incredibly close to zero. It was clear Cheney wasn't a "car guy" but he had some strange soft spot for air-cooled VWs. The best I could figure is knowing I was an attorney and why I was in DC he wanted to stay as far from SCOTUS and Halliburton as possible given it was early 2011. He struck me as a usual mix of baw and ivory tower intellectual.

When I was in 2nd grade I sat next to JFK Jr on a 1 hr commercial flight. We hit it off and i wound up inviting him to my birthday party in Sherwood Forrest. He never showed.

1992. I was 12 and flying back to NOLA by myself from my step-grandparents home in Michigan. Sat next to a guy coming to NOLA for the Olympic trials when they were at Tad Gormley. He was competing in the long jump and his name was Joe Green. (I’ll always remember that because he said everyone called him Mean Joe Greene because of the football player.) I think he ended up medaling in the Olympics. Nice guy. I remember telling him the Causeway was the longest bridge over water in the world and he was impressed that I knew that.

National Forest campground outside of Seward Alaska. I ran into a guy who was retired from both the San Francisco DA and public defender's office. He and and his wife were spending their retirement touring the US in a little camper van. Spent a couple of hours talking with him about the Summer of Love, the Zodiac Killer, Jim Jones and a bunch of other stuff.

Met a man while visiting SO's family in Venice, Florida. We were both eating at McDonald's. He was from Philly so we started talking about all Philly sports. (I'm in DFW so we dislike everything about the Eagles)

Most of mine were in airports. One time some guy talked to me about being abused as a kid. Never exchanged names. Just sitting at the airport bar for a couple hours.

I’ve ridden my motorcycle cross country a couple of times and tent camped during the trips. I’ve met lots of interesting people that way.
Also, my family has gone on lots of cruises. Some had assigned seating throughout the cruise. We’ve met a lot of really great people and got to know them fairly well by dining with them every night for a week.

We went to New Orleans for a wedding and my wife got food poisoning on the way down so she stayed at the hotel and I walked down to Fat Harry’s to watch college football for a few hours before the wedding. I sat down at the bar by a random guy and his wife. We struck up a conversation and sat there for probably 3 hours talking about whatever, drinking a few beers, and watching football.

A few years back I was with family at an outlet center in Dallas. Everyone had their eye on a store to go to. I am not much of a shopper so I found a park bench with another guy to sit with.
He was a WW2 veteran who was in the Pacific. We talked for a long time and he went ashore with Douglas McCarter who had "promised to return." McCarter had a big press conference and let everyone know that he had returned. The veteran though that was arrogant as all of them had returned not just him. Interesting perspective.
Much better than looking for tennis shoes.
