There’s all kinds of crazy theories about this, one being that the Aten religion and early Judaism were either one in the same, or it transitioned to the other, and that the ouster of the Aten followers from power (replaced by Tut who brought back the old gods) triggered the Biblical Exodus.
Another theory is that the historical timeline for the Exodus is wrong, and that it actually accured a couple hundred years early around 1550 B.C. during the reign of Ahmoses, which would mean the Hyksos expulsion and The Exodus were one in the same event.
This also would have been at the same time as the Eruption of Thera (the modern Island of Santorini), which could have explained many of the Biblical plagues.

Akhenaten made the mistake of trying to replace the state religion with his monotheism, and the priests and believers didn’t appreciate that. So as soon as he died they threw his BS away and went back to their BS.

As far as why: Because it didnt last. Most religions don't. In this case, it seems that a few people at the top wanted to push this change while most didnt. Forced change from the top down doesnt usually go well in the long run.
Change movements only work if the movement taps into a deep need or desire of a large amount of people. If they don't, even centralized authoritarian systems cant make it work.
Amun wasnt broke. Ahknaten shouldnt have tried to fix it.

The true first god is the Sun. It is also the only real god that we have. The saying "Son of God" was lost in translation and really meant "Sun = God".
