For quick games that can still be intense: Cadillac or Gut if you want to play a quick game for money but the pot can get big quick.

We play Cadillac for shots. Lowest score shoots whatever is in the glass. The day after my brothers wedding, four of us ended up playing until we emptied 2 fifths of Crown. Needless to say, that Monday was the worst hangover I've ever had.

Oh hell is great.
Another good one is High, Low, Jack and The Game (also known as Pitch). Its a much better version of a euchre style of game which takes much more skill and less reliant on good cards.
One your play High, Low, Jack and The Game, you dont really want to play euchre any more.
