When I was in college I worked at a Taco Bell for a week. Every staff member were high school dropout friends who seemingly lived with/near each other. It only took a few days to realize that I couldn't stand the low IQ 'tards. Anyways... there isn't much to the meximelt. I know when it was first brought into the menu they had a packet of seasonings they put on the mound of meat/cheese/tomatoes before it went into the steamer. By the time I was there it had changed to diced tomatoes in a tub like you see table bussers carry around. They'd dump the tomatoes over there and then had a bag of seasoning poured over it. The next day it would be stirred, and day 3 it would work its way to the line. There's 0 reason that they couldn't bring it back to the menu and use the original method.

The other big thing that I learned is that the beans come out of the bags looking more like dried dog shite than beans. Beef was marked as "meat filling" but steak and chicken were the two that looked the most like they should. They were in mega sized Banquet Cookin' bags that were just dropped into a pool of hot water for a few minutes.
