Is something like camping an option?

There’s also small towns that might fit what you’re looking for. Sometimes it’s nice to go to a smaller town and just explore for a day or two. Something like Natchitoches.

It's about $300/per night. You can get it for half that if you book with the Military rate (show up with a New Iberia Haircut & explain you forgot your Mil ID if they even ask for it)

Don't really have camping gear...a cabin or hotel will do..looking for things to do with kids aged between 13-1..like I said hiking, beach, fishing, maybe something like hot springs walking downtown..maybe a kids museum close by or a zoo since we love visiting zoos!

Well that resort is legit for the kid 'fun factor'. They have employees constantly doing activities and hosting games in costumes like Jack Sparrow for example.
Good family fun with a tiki bar close by for mom and dad.

Plus, much like these type of services, it in no way fulfilled the OP parameters. 6 hour drive to San Antonio? $500-$600 for a wkend with wife and kids?

Grand Hotel Fairhope Alabama. It is the same thing as the one like the other posted in San Antonio, but driveable in 3 hrs

May have narrowed it down to gulf shores and stay on the beach and go to the Alabama gulf coast zoo and play some mini golf..any hotel recommendations on that strip of beach around hwy 182 and hwy 59?

Mountain Harbor resort on Lake Ouchita in Arkansas. You can rent a cabin or condo. Very beautiful scenery, has a spa, horseback riding, hiking, huge marina with scuba rentals, ski or fishing boat rentals, an excellent restaurant at the lodge right up the hill from the marina. Also 30 minute drive to hot springs. Depending on what all you do, might cost a little more than 600 if you rent a full cabin. The lodge has hotel rooms though that are fairly cheap. You can rent a bass boat for about 250 a day I think. They also have campsites if you prefer that route
