Somebody educate me on using wi-fi on a plane

Do you absolutely have to keep your phone on airplane mode? I would be able to listen to much more music if I don't have to keep it on airplane mode.
Also, can you use wi-fi while on airplane mode?

If you aren't on the plane's wifi network, there is no point in not being in airplane mode as you will be killing battery as the phone tries to initialize communications with a non existent tower.
