Look I don't particularly care for what OP did, but .6% of the population currently identifies as transgender, and that has doubled in the last 10 years. Especially if the OP goes to the same locations on a regular basis (this reducing the sample size) it is not even close to a 100 percent.

But there are legit biological and physiological conditions that cause people to not fit neatly into either of the male/female boxes. One of the most fricked up 20/20 episodes I saw as a younger person.

Especially when you realize that some parents choose a physical look that is against the biological assignment.

That means that, on average, more than 1 out of every 200 you meet identifies as transgender. Think of how many servers you've had at how many places over the years. Think of how many transgender-identifying folks probably didn't express their identity publicly, especially at work, before Bostock v. Clayton County. Think of how many still don't.
