Making gumbo

Boiled chicken to make stock.

Then deboned chicken

Now those bone are roasting in oven at 425

Will be added back to stock once nice and dark and boiled for another 40 minutes to complete stock

Always concerned about what to do with the bones - my prep cooks don't like to debone chicken, so we usually cheat and go with boneless meat for smaller gumbos.

Just picked up a case of burr, 2 lean NY strips, some red potatoes and garlic bread for another grilling by myself football saturday

Thing is that you can make lots of stock and freeze it

Use chicken for tacos, chicken salad, in salads, etc.

I have a mixed salad bag and a smidge of blue cheese in the fridge so I might throw that together as well. Thx again dad!
