Well, turtle shells in gumbo sounds nasty too.

Jambalaya is something that people can screw up depending on how it's seasoned and the type of rice used. But it's more forgiving than gumbo is.

let me also say

different people like different gumbos. i'm not judging their preferences. i'm talking about gumbo that i like

i had a big arse bowl wednesday night at a campaign meeting. i have to really like it in order to eat all that rice. that version is one i trust

im pretty particular. But a good gumbo is hard to beat, especially when the weather cools
