To be honest, they don't do a whole lot when fitting you for a shoe. They check to make sure you do or don't need a stabilization type shoe, and may make recommendations on what type of distance you are running. But if you aren't running that far, it's probably not that big of a deal. Everything after that is how it feels to you. You can easily find online how a shoe should fit you.
Now if you are running a marathon, and have no clue about what type of shoe to buy, I recommend spending some time with someone who knows. Terrible shoes had my knees iced up after every run. Good shoes and I never have an issue.

Yeah, it's not good.
BilJ, running shoes are meant for low impact. HIIT is explosive, and you are harder on your feet and knees.
You need cross-training shoes.

New UA cross trainers are pretty awesome. I loved Nike Free 5.0 trainer v4/weave, but not sure if the new version (v6) are any good.

Proper form in HIIT is much easier to attain in something less bulky.

I run in Brooks now, but I think Newton is my next purchase. They just look like they would be good
