Self cleaning usually works by heating it up as much as possible and burning off the dirty areas. It pretty much sucks.
Best way is to coat the dirty areas with baking soda and periodically mist with water. Then scrub it off.

I'm pretty sure my oven's instructions say to remove the racks before using the self-cleaning feature.
Regarding the roast chicken...why would you cook one when every grocery deli and even Walmart sells delicious roasted chickens for about $6?

They do, it destroys the chrome, which is toxic if I remember right. But if you run your vent full blast and do it one time, you can then season your racks and use them as grills.
As for the chicken at grocery stores, a properly brined and roasted chicken is awesome.
