Red Badge of Courage
Start this weekend by moving out of your comfortable house and do without ALL modern conveniences as your read the book.
No cheating, try to put yourself back in time. Then approach the book as if you were alone, by a river, etc.
You'd get a lot more out of the book that you would the Toni Morrisons or the 'classics' set in England.

The Kite Runner is an amazing book

From a guy who has an English Lit degree and had to read many of these books. Do yourself a favor and read The Jungle by Sinclair. There are a lot of reference materials and papers out there to be had for your research. It is also a fairly interesting book that is a relatively easy read. Pretty interesting too.
I read The Kite Runner for a Post Colonial Literature class and while I found it a very interesting book (I served in Afghanistan so could draw on images of some of the places), it was hard to do a paper on because there hasn't been as much discourse on it as the others.
Slaughterhouse 5 would be my next choice. Again a lot of reference materials and the book will capture your attention. A lot of Post Modernism themes in it. Pretty sure you can draw modern comparisons.
