If you have a state licensed surveyor's seal stamped property description with surveyed stake marker locations on file at courthouse your good. The neighbor has the right to have his own survey done to verify or challenge your currently on file survey. If a month or more of time has past and your on file survey has not been challenged, then move forward with activities on your property legally filed survey.

This is what I have...
I just called closing attorney... She said the title check came back clear.. That this guy never owned any part of my land.
The survey of his land confirms this all the way back to 1910

On the survey that you have, is the drainage easement shown as a straight line from the road back to the bayou? Because it looks to me like the actual ditch turns a bit about mid-way along CCA's property line.
Any chance the ditch was redug at some time in the past outside of the servitude? Meaning that angled stretch of ditch is on CCA's property along with those pecan trees.

A couple things:
1- How did the neighbor go from being a trashy redneck to a crazy coonass?
2- OP is not the brightest. We all "get it" that you have paper that says you own that corner. As pointed out by a few, if redneck coonass decides he wants to go to court and can prove he's considered that land his ever since his childhood with his dad, OP prolly gonna have a harder time than he thinks.
3- On that piece of land, who cuts down mature producing pecan trees and puts up a shed? There's like 10 different places the shed could go - even if you're builing a home on there.

The ditch doesn't curve... Idk why it looks like thst but it's a straight line back... And plus even if it was widened at some point the updated survey stakes are still on the outside of the ditch.

As has been pointed out to you on numerous occasions, a title check would not cover issues of acquisitive prescription.
ETA: And please satisfy the OT and let them know you are a tool who has nothing better to do than cut down two perfectly fine pecan trees to make way for your trashy shed.
BTW - I would be more worried about grass than your trashy shed.
