Late 70's to early 80's Fords are in good supply and the parts are easy to find. Fairly cheap.
Late 60's Mustangs are fun. You can buy literally everything post market. Also easy to mix parts. I put disc breaks off some LTD on mine back when.

I'm going to do an older Mustang. Parts and instructions are easy to find and not costly. Lots ofparts manufacturers out there for pony cars.

My Dad and I restored a 69 Camaro. Was a lot of fun and I learned stuff about cars as a teen that still applies today.
I know another guy that did a 69 Firebird about 3 years with his teenage boy.
The Gen 1 F Body cars are pretty easy to restore and parts are easy to come by.
Another option is build out an older Jeep Wrangler. CJ, skip YJ, TJ or an early JK. Snag an early JKU is safety is an issue.

we saw a wagonneer this weekend at a camp out and my 9 year old liked it.but to each his own.
the 88-98 chevy trucks can be found cheap and lots of used and aftermarket parts are available. the 95 and newer have airbags and antilock brakes.

Those are all pretty standard projects that you can easily and cheaply find parts for. A Grand Wagoneer is gonna be expensive to fix up

Out of curiosity how big of a project would this be for someone who has never really worked on cars to any great degree? I’m fairly mechanically inclined and a bit of a tinkerer- my boy is 12 and this is something I hadn’t thought of but might be fun.
