Just buy the dog’s ticket one way. The receipt they ask to see doesn’t specify which leg of the trip you bought it for.

You have to bring the dog to the bag check counter and pay for each ticket. At least that's how SW does it.

I get random messages all of the time through Psychology Today asking me if I will sign a letter for their animal of choice to be a "service animal".
And while, theoretically, I could sign a letter for an Emotional Support Animal I refuse to do so.
First, a lot of people asking for an ESA don't understand they are not an official Service Animal like someone would have for seizures, blindness, etc. That's a whole different deal that requires a fully trained animal and ADA paperwork. Second, I would have to carry a rider on my liability insurance that's stupid expensive and would be assuming liability if I said someone could have an ESA and they harm the animal (or the animal harms someone else).
I honestly wish there was more standardization nationally for this.

that may be true, but a business cannot compel that it be provided; all they can ask is: (1) is the dog a service animal required because of a disability, and (2) what work or task has the dog been trained to perform, per ADA title II and title III

Not sure why you're getting those requests...
ESA's don't qualify per new regs that the airlines told Congeess to approve.
The dog has to be trained, and you have to list the trainer's info on the form.

It is also easy to see the difference if you have ever been around a service dog. They do not react to you or the surroundings, bark, relieve themselves, etc. They are trained. That is how you instantly know the difference. This is one of my biggest pet peeves.
