Summer is kind of expensive to fly into NYC, but I'm finding things in the $250 range. Can you only do weekends or middle of the week ok?
$253 Sat July 25- Tues or Wed July 28/29 with onestop on US Airways
$259 Sat Aug 1- Wed Aug 5th nonstop on United Southwest is $242 if you could do Wed July 29- Wed Aug 5

Pimp, San Juan, Puerto Rico can be had for your time frame for sub-$400. It's another option, just not technically out of the country.

The SW tip to Cancun was money bro. Much cheaper than Kayak and other sites. That's where I'm leaning because I have a 2k credit on my Venture card and hotels are cheaper there.

As rocket mentioned earlier, I use google flights the calendar feature and type in msy for departure and pick a random date, say Wed Sept 9th return Sat Sept 12th. Then let the map load and everywhere in the US and world pop up with prices. If I see some cheap flights to a location say Chicago, I'll click on Chicago. Then once you click on Chicago, a calendar pops up for the departure date and will show you all of the cheap dates to fly. If I see cheap flights, I'll then take a look at Southwest's website to see if they have the same or better deals.

You may not like this suggestion, but try Cuba. With the current sitaution there American's are flooding there for many reasons. One, with the next president we have no idea if relations will last, and historically it has been off-limits to Americans, making it even more exciting. They also have resorts just as any island country does that are considered very safe.
I know some people would think this is a terrible idea, just something to look into.

Is there an equivalent site that will also search radius of or multiple departing airports and arriving airports?
For instance, I'm looking to leave out of BTR, MSY or BHM and fly somewhere scenic to drive from. Bozeman, Jackson Hole, Salt Lake City, Idaho Falls or even south like Santa Fe

Google flights even does that
Where you type in the departure "New Orleans", to the right of that you'll see a + button. Click that and then the list will pop up. Now you will have to do it separately for where you want to search. Example is in the link below for MSY, BTR, LFT, GPT to SLC. Do the same search for BZN, Jackson Hole, etc. LINK
