I am infatuated with organized crime. From the moral codes, to the blatant disregard for society's laws, to the extent of corruption, etc.

I have been wondering for a while now how organized crime could've been bigger & how they could've gotten away with it.

For instance, we have laws that prevent surveillance of certain locations i.e. Churches, Doctor's offices, & even attorney client privilege.

So, why don't mob guys meet each other in churches to conduct business? Or in a doctor's office (doesn't take much to corrupt a doctor into letting you use the facility)? Or evenmore so, why not in their lawyer's office? They could easily meet & just say before every statement "Hypothetically, what if I meet you at X location with Y product?" then the other gangster could say "Well then, hypothetically I would meet you there & pay you Z dollars."

How could a prosecutor make the case against them without sufficient wire taps?

They never had trouble making money illegally and getting away with it.

They just had trouble hiding the money from the IRS.

Things you tell your lawyer are confidential. Things you tell your lawyer while a third-party is present are not confidential. Lawyers also can't help clients commit crimes. If lawyer believes the client is obtaining information or advice for the purpose of committing a crime, the lawyer must withdraw immediately.

why not in their lawyer's office?

Because they view lawyers just like they view everyone else. They're suckers in their eyes. They hate lawyers. They only have lawyers because they have to in order to give them the best shot at beating the case against them.

Why meet in a church or doctors office when you can just meet at the mayors office or the governors office.

Kennedy's old man was a bootlegger and the mob helped him become POTUS

Trump and his dad were tied to the Italian mob and Trump has since added the Russian mob and both helped him become POTUS

Organized crime works because they control the government. If crime was disorganized this might change some day, but probably not.

Absolutely they can, Michael Cohen did by his own admission.

You just have to not get caught.

Because the collective IQ of most mob gangs is about equivalent to a C average high schooler.

Desserts are their weak spot.

That’s normally how the Feds got them.
