We've cooked nutria a few times. Not bad at all if you cook it right.

Had it like 20 years ago at NOWFE. Enola Prudhome cooked it with a creole mustard sauce over smoked gouda grits. It was pretty damn tasty.

Nutria is pretty good. Tastes kind of like squirrel. I would eat it again
