So Railroads should be forced to still have cabooses on every train with a person aboard them because they are exploiting their workforce laying off caboose guys through technological advances.
Also, I’m going to generally disagree with your inference that “New Yorkers would work” is largely true.
Minimum wage laws have become silly socialist political footballs.
Capitalism and the free market need bumpers put up but not stupidly high minimum wage levels.
Need a garbage man to service the wealthy City of Cupertino? It’ll cost more to effect than it would in Bunkie. Pass the additional cost on to the Cupertino folks.

You are absolutely right.
What you don't understand or you wouldn't have made this statement, is that a single business can't just do whatever they want and survive financially. EVERYTHING in NYC is expensive: rent, utilities, COGS, etc.
Should every retail location get rid of self check out? Should ordering goods online from my computer be illegal and we have to shop in person? Where does it end?
It ends on what the consumer decides. If this works and people use it, it should be allowed. If it doesn't work and they have to bring in local labor to do it, so be it.

It’s now owned by the London based, British multinational goods conglomerate, Unilever.
Unilever recently purchased the chain from private equity firms Breakaway Ventures and Castanea Partners.

For businesses in NYC that aren't gigantic corporate chains, RENT is the problem, PERIOD.
Whether I could pay a couple of dollars less than current minimum wage would be such a tiny drop in the bucket compared to the outrageously expensive, ballooning rent.
And, just like with the private equity restaurant in the photo, one need only look as far as private equity companies to see the common denominator with rent and offshoring jobs.
