Exactly. Service industry folk also enjoy being paid $17.00+ a hour as well. Talk to them and see who wanted to work and who wanted to take off. Those who wanted to come in, pay them well.

As someone who works in the food business, I've had this very discussion with over a dozen businesses in the Quarter this week. From what I've gathered, for most of the restaurants in the FQ, especially those further away from Canal St., Essence Fest provides little impact. And so, because it's the "slow" season in downtown New Orleans, it would make sense to close for the 4th and let it be used like vacation time.
But many employees of restaurants downtown do not look forward to Essence for specific reasons: To summarize the words of a (black) kitchen manager, this weekend there will be an inordinate amount of complaints. Complaints about not splitting checks for large groups, complaints about not subbing menu items, complaints about wait times for large groups. Tips will be way down.
Another restaurant owner told me he wished sites like yelp and trip advisor would shut down this weekend because, deserved or not, complaints will sky-rocket.
In all of the conversations I had, I never got the idea that these restaurant workers were being racist. I mean half of them were black themselves. They were just conveying to me their concerns based on previous experiences.

If the National College Republican convention was in NOLA and chicken and watermelons closed down I highly doubt anyone would bat an eye

I'd be more disgusted that Walk Ons waited to do the repairs and continued to service customers after learning of raw sewage. If an answer is "hey, you want us to serve people with THAT going on underground?" then they should answer if they have already served people with knowledge of issue...
Yes, but if festival pricing/event pricing did not exist for Mardi Gras, Jazzfest, FQ Fest, Saints games, etc, then there would be other issues.

This way, they get Saturday through Monday or Tuesday off. Usually, it's just Monday and Tuesday

I get it. Look, its your business. If you want to shut it down, by all means. I'm just offering my input strictly on a business and economic input.
If you charge $9 bucks on a draft Coors, you're making probably $8.50 straight profit. If you charge a $18.00 burger, you're probably making $15.00 straight profit. That way, you can easily cover your employees "event salary" at $18.00 a hour.
Setting prices high, especially for that product, would also detour the vast majority of customers. Those who come in...well...let 'em pay.

The african american culture needs to get on board with tipping and not sending food back more than half eaten. It sounds racist but it's true.

The American culture needs to get on board with paying their employees more than $2.00 a hour and not relying strictly on tips. Why should we be responsible for paying your employees. That's one thing the Europeans really hit the ball out of the park on.
