The idea isn’t new of course.
Countless movies have been made on the subject, most drawing their inspiration from Richard Connel’s “The Most Dangerous Game”.

But what if, instead of putting up these child rapists, mass murderers and terrorists in prisons, costing the taxpayer dime to keep them fed and healthy, we made some money off of it?
What if we, as a collective society, said “if you’ve done something so heinous, so vile that we’ll lock you up forever, instead you’ll be auctioned off. For the Hunt.”
Big game hunters pay tons of money to go after exotic animals. Why not the scum of the earth?
Release them into an enclosure, unarmed.
Then let the hunt begin.

I’m not sure if it’s in that county but watch the Netflix documentary “Pervert Park”- it’s about a trailer park in Florida inhabited by only seconds offenders. (Men, women, old, young). Naturally everyone on there is trashy as hell and could immediately be pegged as a sex offender. The show was interesting. They have like support meetings/potlucks and stuff

Many offenders are significantly overweight, so he’ll either need to trim the meat carefully, or cook at low temps for lengthy periods.

You can make a killing as a landlord to sex offenders. There are trailer parks, apartments, and in this case weekly/monthly hotels that cater to them. The places they can live are restricted, so you can charge higher than market rent, and they always renew their lease. My understanding is that they are usually very good tenants because their options are so limited.
