figure it out. restaurants pay about $60 dollars for a 5 gallon bag in box. which makes 55 gallons of finished product

I'm not this extreme, but everything I've read is that people really really don't understand much about a cost structure at a restaurant. Sure, that tea and soda looks like a nice profit, but there are a shitload of overhead expenses that go into that. The food profit is very slim, so the restaurants try like hell to make it up on drinks.
