At the Subway I go to most of the time, the lady who owns/manages it is always there working on making the sandwiches.

Why would they try NOT to satisfy customers while the owner is there?
Not something I pay attention to, but seems like it should have the opposite effect of what you're saying.

I've worked at a place like this and we literally had a scale to make sure we were giving the right amount of fries. This was an open kitchen too. It just looks cheap for the customers to watch you carefully weigh everything out to make sure you're not getting too much of something.

Some years ago I was at one of those DIY car washes. The owner was there policing the area. He flipped on unlimited wash time for me without asking.

He's talking about when the owner/manager is the one making your sub or rolling your burrito. Izzo's and Chipotle are the two that come to mind.
I hate it when I get a manager at Izzo's I have to tell them to keep adding for pretty much every ingredient. It physically pains them to add more than the minimum.

While people are giving you shite I have noticed it numerous times over the years. It is almost always an overdressed overweight dude that even though he doesn't move outside a 3 foot circle he still manages to be in everyone's way. Oh, and he is always sweating like a whore in church and when it slows down he is out wiping tables and greeting customers, still streaming sweat.
