I think it would be cool to build a log cabin or a regular wooden house and just cover it with clear coat. It would preserve the rustic look and provide a relatively low maintenance homestead.

Sun and weather will eventually mess up the best of the best brands. What happens when it needs to be removed and re-applied?

I covered a screened porch floor with clear coat. After a year or two the finish became crazed and started peeling. Had to take it down to the bare wood and restain it.

Cover your entire house with a super-hydrophobic coating…

Sounds poor

I only used copper with 24k gold fasteners for the exterior of my house

I would have used all 24k gold but it weighs too much, that was the only limitation.

All the major paint brands make a log home clear finish. It isn't really any lower maintenance than paint since it doesn't last forever either.

My walls are all v joint pine. I did sander sealer and a couple coats of a non yellowing clear. It was definitely thicker than stains, I applied it with a brush. It would self level and leave no brush marks, so it was thinner than most paints. Basically looks like this 15 years later, but not actually my pic.

Stains, water seals, anything clear you put on wood provides no protection from deterioration from ultraviolet rays. The original deck on my house was always painted and still looked good after 30 years.

I don’t think that would work the way you think it would. I periodically coat my wooden front door with spar urethane (which is what they use on boats). It doesn’t last more that ten years.
